Gardening can provide children with moderate exercise, School-based gardens can serve as healthy lifestyle teaching opportunities, by teaching children better eating habits. Gardening not only provides opportunities to improve student knowledge and skills related to healthy eating but it also significantly enhances their awareness of the environment. Vegetable gardens provide continuous visual reinforcement of nutrition lessons, even on days when nutrition is not being taught.
Children who plant and harvest their own vegetables are more willing to taste and even like them. A study of third, fourth and fifth graders showed that students participating in a garden program had increased. self-understanding, interpersonal skills, and cooperative skills when compared to non-gardening students, (Journal of the American Dietetic Association, 102(1), 91-93. Robinson, C. W., & Zajicek, J. M. 2005.)
Biophilia has become an increasing area of study for reducing stress and anxiety in dense and urban environments because we are genetically programmed to find nature engrossing, we are absorbed by nature scenes and distracted from our pain and discomfort. One explanation for this is that nature provides a respite from the constant effort to screen out competing stimuli in our busy lives and environments. Because humans find nature inherently engrossing, we don’t have to try to focus when presented with natural views. This reduces mental fatigue and refreshes the mind.
